Summer in the city

If you’re lucky enough to be living somewhere where summer means hot (I spent three years in Belgium, so I know there’s no direct link!), then like me you might be willing to indulge in some fresh cooking.

Summer means that you don’t need to be fancy in the kitchen – there are so many other distractions out there anyway. As long as you can find fresh ingredients, the simplest dish will come alive and explode with flavour. Personally, I think it’s hard to beat the insalata caprese for a combination of taste, refreshment and simplicity.

Get some fresh tomatoes from your local farmers’ market, some real mozzarella, and some of that basil that you undoubtedly have growing on your window sill (if you don’t, you should!!). A dash of olive oil, ground pepper, and that’s all there is to it. For a twist, you can also try this as a bruschetta, on toasted bread. It makes a great appetizer!

Fresh. Easy. Delicious. Summer is great.
